Baby Yums ~ Welcomes Fall with Apples!

Bread puddings were the invention of thrifty cooks to make good use of stale bread. This one is packed with sautéed apple slices to give a memorable reminder of the past. It’s wonderful on its own or accompanied by cream, custard sauce or yogurt.

Preparation Time:15 minutes
Cooking Time:55 minutes
Servings:4

Ingredients:

  • 2 tbsp (25 mL) dry bread crumbs
  • 6 large slices firm white stale bread, preferably home-made style
  • 1/4 cup (50 mL) butter
  • 3 cups (750 mL) sliced cored peeled Ontario McIntosh Apples
  • 2/3 cup (150 mL) granulated sugar
  • 2 eggs
  • 2 cups (500 mL) hot milk
  • 1 tsp (5 mL) vanilla
  • 1/2 tsp (2 mL)cinnamon
  • Pinch of salt
  • 2 tbsp (25 mL) red currant jelly, melted
Preparation:
Sprinkle crumbs in well-buttered 8-inch (2 L) square baking dish. Remove crusts from bread; spread bread with half of the butter and cut into quarters. Line dish with half of the bread, buttered side up.

 

In large skillet, melt remaining butter over medium-high heat; sauté apples for 5 minutes. Sprinkle with 3 tbsp (50 mL) of the sugar; sauté apples for 3 to 5 minutes longer or until apples start to turn golden. Do not let apples become mushy.

In bowl, beat eggs well; beat in remaining sugar. Gradually whisk in hot milk, vanilla, cinnamon and salt; pour half of the mixture over bread in dish. Evenly spread apple mixture over top. Cover with remaining bread and pour remaining egg mixture over top.

Place baking dish in larger shallow pan. Pour 1 inch (2.5 cm) boiling water into larger pan and bake, uncovered, in 325°F (160°C) oven for about 45 minutes or until custard is almost set. Remove baking dish to wire rack. Brush currant jelly over top of pudding. Serve hot or warm.

Apple Cider Rice Cooker Oatmeal 6-8 Months
(steel cut oats used for this recipe)

Ingredients
2 1/2 cups of apple cider
2/3 cup of water
1 1/4 cups of rolled oats (don’t use quick cook oatmeal or the recipe won’t turn out well – trust me!)
shake of cinnamon
shake of nutmeg
pinch of powdered vanilla
handful of raisins or dates or chopped apples (optional – if using the raisins and/or dates, remove them if serving to baby!)

Directions:
I used steel cut oats for this and the texture was more chewy than you may want for your younger baby!
Lightly butter the rice cooker pot then combine all ingredients in the rice cooker and stir well
Close the cover and push the switch to cook
After 10 minutes, carefully open the rice cooker and give the oatmeal a quick stir, close and continue cooking.

Oatmeal is done when the cooking switch flips to off/keep/warm or whatever it does on your rice cooker (I have an Aroma 8 cup cooker, nothing fancy and only $24.95).  Allow to stand for 5-10 minutes after cooking.

Baby Yums Spotlight ~ Carrots

Each Month Baby Yums spotlights a Vegetable or Fruit. This month the spotlight is on Carrots. Here are a few fun facts:

Carrots are an excellent source of beta carotene, converted in the body to Vitamin A and a source of folacin and fibre.

TIPS:

  1. Carrots may be introduced between 6 and 8 months of age.
  2. Carrots are easy to digest and packed full of nutrients. Vitamin A, C and Calcium
  3. When buying carrots, look for minimal sprouting on the top. The more sprouts a carrot has the longer it has been sitting around.
  4. Best way to keep the flavour, in carrots is to refrigerate them
  5. Steaming is the best method for cookinig and preparing them

Here are some of my go to “Carrot” recipes that are sutiable for 8 + months enjoy!

Carrot-Rice Casserole

3 cups grated carrots
3 cups cooked brown rice
1/2 cup finely chopped onion
1 tablespoon minced fresh parsley
1-1/2 cups evaporated skim milk (try plain yogurt instead.)
1/2 cup egg yolks
3 tablespoons grated nonfat or reduced-fat Parmesan cheese

Combine the carrots, rice, onions, herbs in a bowl, and stir to mix well. Add the milk
(or yogurt) and egg yolks, and stir to mix.

Coat a 2-quart casserole dish with nonstick cooking spray, and spread the mixture evenly in a dish. Sprinkle cheese over the top.

Bake at 350 degrees for 50 minutes to 1 hour, or until a sharp knife inserted in the center of the dish comes out clean. Remove dish from oven and let sit for 5 minutes before serving

Here is another go to great easy kid friendly recipe:

Carrot Potato Pancakes

Ingredients:

  • 3 cups (750 mL) Ontario Carrot, shredded
  • 1-1/2 cups (375 mL)  Ontario Potato, peeled and shredded
  • 1/3 cup (75 mL) Ontario Onion, finely chopped
  • 4 eggs, lightly beaten
  • 1/3 cup (75 mL)  all-purpose flour
  • 2 tbsp (25 mL)  chopped fresh parsley
  • 1 tbsp (15 mL)  chopped fresh dill
  • 1/2 tsp (2 mL)  salt
  • Pepper

  • Dill Yogurt Sauce:

  • 1 cup (250 mL) plain regular or low-fat yogurt
  • 1/4 cup (50 mL)  regular or light mayonnaise
  • 1 tsp (5 mL)  chopped fresh dill
  • 1 tsp (5 mL) lemon juice
Preparation:
In large bowl, combine carrot, potato, onion and beaten eggs until well   combined. Stir in flour, parsley, dill, salt and pepper to taste.

Heat 1 tbsp (15 mL) vegetable oil in large nonstick skillet over medium-high   heat. Spoon about 2 tbsp (25 mL) carrot mixture into pan; flatten slightly. Fry   on both sides until golden brown; drain on paper towel. Keep warm in oven while   preparing remainder, adding more oil as needed. Serve with Dill Yogurt   Sauce.

Dill Yogurt Sauce:
In small bowl, stir together yogurt, mayonnaise,   dill and lemon juice; cover and refrigerate until serving.

Who needs Rain boots? ~Baby Yums guest Blog~

Did you think we would  ever see Mr. Sunshine again? Well it’s Friday and hopefully we will start seeing the sun again. This week has been very trying in so many ways. Trying to get orders done, activities to excite the kids while at the same time not to bore them with the same old things. This weeks guest blog I’d like to share with you what I did with the Boys  this long gloomy week! On the bright side I started to love the rain.

Who needs rain boots when you have a list of fun things to do in the house.

  • Baked – homemade cinimon raisin bread
  • Made – play-doh
  • Had a movie day with popcorn, pillows & blankets
  • Played dress up & music band and sang songs
  • Made homemade fudge
  • cloured & did some crafts
  • read books about Spring Time
  • Dinner for 4 my oldest helped make a yummy dinner

This keeps our house busy all week doing different things to swtich it up. Th edays where it was gray but not “raining” we went out with our rain coat & rain boot and we stomped in puddles. My oldest even played with his unbrella something he dose not get to play with to often I could see the sparkels in his eyes. Having two boys I know they like mud worms and puddles I had to adventure in the fun with them.

Rainy Day activities, recipes & crafts all info listed below: I hope the rain stays away for a while but whatever you do to make your day as brings as can be I hope that these help you get though a gloomy day. As a mom I have to be creative as much as I would love to crawl back into my bed and sleep the day away I’ve come to relize that is just a day dream now. If you have any tips you’d like to share please leave a comment below I’d love to add some more fun things to the mix.

Here is the recipe for the homemade cinimon raisin bread click for whole recipe

Ingredients

  • 2 cups bread flour, plus more for dusting
  • 2 cups whole-wheat flour
  • 1/4 cup nonfat dry milk
  • 1 large egg
  • 2 tablespoons canola oil, plus more for brushing
  • 3 tablespoons honey
  • 2 teaspoons salt
  • 1 1/2 teaspoons instant dry yeast
  • Cooking spray
  • 2/3 cup raisins
  • 1 tablespoon plus 1 teaspoon ground cinnamon
  • 1/3 cup packed dark brown sugar

 

Recipe for homemade Playdough you will find a kinds of different homemade playdough when you click on the link.

Kool Playdough

3 cups Flour
1/2 cups salt
2 Koolaide packages
2 cups Boiling
water
Mix dry ingredients together. Add boiling water. Knead on floured
board can add flour by sprinkles until desired consistency. This playdough will
last for a long time when stored right.

Oh Fudge this is good! Recipe

Caramel Fudge

Mix:
2 cups brown sugar
1 can
sweetened condensed milk
1 cup butter
1 tsp. vanilla

Microwave  10mins., stirring every 3mins.

Remove from microwave& add 1 box
Baker’s white chocolate (6 squares)
Let stand for 1min. & then mix with electric mixer for 2mins. on medium
Place in a buttered dish our use PAM (I reccomend PAM) less sticking

* or chocolate fudge: 6 squares unsweetened chocolate *

Dinner for 4
Pasta recipe easy simple quick

Jamie’s recipe for Spaghetti with red onions, sun-dried tomatoes, balsamic vinegar and basil from his book “The Return of the Naked Chef”. Serves 4.

455gr/1 lb dried spaghetti, the best you can get
1 red onion, peeled and finely chopped
olive oil
2 handfuls of sun-dried tomatoes in oil, chopped
3 tablespoons balsamic vinegar
salt and freshly ground black pepper
2 handfuls of basil, torn
1 small handful of Parmesan or pecorino cheese, grated

While cooking the spaghetti in salted boiling water until al dente, slowly fry the onion in a couple of lugs of olive oil for 5 minutes until soft and tender.  Stir in the tomatoes and vinegar, and throw in your drained pasta.  Season and toss together with the basil.  Serve with grated Parmesan or pecorino.

Ok so I won’t blog my little heart out about the Kitchen let alone the sink but I did find a few cute kitchen gadgets that thought would be fun to get a few comments. Since I’ve started cooking a lot of Baby Yums fresh homemade baby food I’ve find myself wanting new little gadgets to help me out along the way or make things fun!

My new favorite website to find really neat interesting things would be stumbledupon.com I had a little sneak peak at was was out there so I’ll post a few of my favorites that I’d like to share with you.

Ok you got to admit it’s a weird kitchen gadget but could be a great topic for discussion when entertaining with guest. I’ve been curious to know if that man in the middle comes out. It’s a pretty weird gadget as I’ve yet to see it in someones kitchen. Have you seen this? If so what are your thoughts would you have this on your kitchen counter? I would if I was single as I’m sure it would scare all the men away hhhaa. It is a funny looking knife holder but funny at the same time.  I’m going to leave it at that. When I stumbled upon it I could not help myself but think, weird, funny yet neat!

I really like this one because where huge BBQ lovers and when I say we’re I mean Hubby & Myself. For the longest time I did not eat meat once I was introduced to a great BBQ steak I fell in love. I think this funky little gadget is great to add personal touch to your meat on the grill great for when you have company over and you can “brand” the steak and know who’s steak is who’s. I know it’s not a “need” but it is a pretty funky gadget! I don’t personally own one but I will be on the hunt and try to find one for a funky little Father’s Day gift. I will let you all know if I find one in the Ottawa area.

  • My third love is not so much a gadget but is used in my kitchen. It’s my silicone muffin molds

It’s my must have gotta have from my own personal experience. I love all the things I use it for. I use it obviously to make muffins for the boys. I also use it when I’m freezing my toddlers food. I also use it when making Baby Yums toddler sized portions. It’s really easy to pop out once the food is frozen. Easy to clean compared to a muffin tin pan. Who uses them anymore anyway? I must admit I was still using the muffin tins till recently I convinced myself that the silicon muffin mold was the way to go. Since then I’ve never looked back.

Just wanted to start off and say a great big THANK-YOU to Spoiled Sugar for putting together an awesome AUCTION last week and all the venders who donated their product. Was a great success! All the money that was raised will go to Weekend to End Cancer.

Good Friday, Earth Day! This day was a great day doing a whole lot of things from getting orders delivered. Getting ready for Easter Weekend. Working on the boys Easter baskets. So what are you putting in the Easter Baskets that are a healthy choice?  Here is a list of things that we have put in the boys basket . Yes Chocolate is in their basket but that’s not what it’s all about.

Our Easter Basket Goodies

  1. A summer outfit (I bought my boys) new swimming trunks & mussel shirt

Need a easy stuffing recipe for your Easter Turkey? Baby Yums would like to share thing simple yet tasty recipe. *Recipe found on Cooking Nook”

Best Turkey Stuffing

3/4 cup butter
2 1/2 cups chopped onions
2 cups chopped celery
4 teaspoons dried sage
1 teaspoon salt
1 teaspoon dried savory
1 teaspoon pepper
1 teaspoon marjoram
1/2 teaspoon dried thyme
14 cups dried white bread, cubed

In a large frying pan, melt butter over a medium heat. Fry onions and celery together with the dried herbs, salt and pepper, stirring often, until vegetables are tender, about 10-15 minutes.

Transfer the mixture to a very large bowl. Add the bread cubes and mix well.

If you are making the stuffing ahead: Transfer the cooked vegetable mixture to a large bowl. Let cool and refrigerate in an airtight container for 24 hours. Mix with bread cubes before stuffing the bird.

Stuff the turkey at both ends with this mixture. (see our Roast Turkey Recipe for directions on stuffing the bird).

IMPORTANT: Stuff the turkey just before baking it. Do NOT stuff the bird ahead and let it sit, even in the refrigerator. It can become infected with bacteria and make you quite ill.

Talent behind the lense

I can’t actually pin point the exact way I met Sara from Sara McConnell Photography its one of those “friend of a friend, who met through a friend of my cousin, who has a neighbour that lives close to me kind of story” However we met …..Im so glad we did! I first met Sara at a Starbucks, I think one of the first things she said to me was “Thank god you’re in yoga pants I didn’t know how to dress” haha – I think she was also sporting some form of yoga pants! From that moment I knew she was a real mom, the kind of love to work with. The kind with an amazing talent for capturing kid shots, But what I didn’t know was that she had a wicked talent for capturing amazing shots!

 I’ve been so lukcy to have Sara take our product shots for Spoiled Sugar. For now – my “casting call” is limited to my triplets which is good, because I have 2 girls and a boy – which works out good for displaying our products – but they get fussy all together, and fight together and compete with one another – but Sara doesn’t mind at all, and it shows in her work – somehow she snaps the camera at the exact time you or I would miss – and she gets the shot!

 She’s often told me that wedding gigs just aren’t her thing and I can see why, she rocks with kids! Nobody has ever captured our trio the way she can!

She happens to just live around the corner from me too which is uber helpful when editing photos, but she shoots on locations to - you can often find her at Gymboree Play and Music Orleans  taking picture of cuties,and of course she’ll come to you too! She’s the first photographer (that I’ve known) who has been doing breastfeeding shots - what an amazing and beautiful moment to capture!

Thank you so much Sara for taking the time in your business to help me, and all other moms that Spoiled Sugar represents – your time and talent is more appriciated than you know!
