Baby Yums ~ Welcomes Fall with Apples!

Bread puddings were the invention of thrifty cooks to make good use of stale bread. This one is packed with sautéed apple slices to give a memorable reminder of the past. It’s wonderful on its own or accompanied by cream, custard sauce or yogurt.

Preparation Time:15 minutes
Cooking Time:55 minutes
Servings:4

Ingredients:

  • 2 tbsp (25 mL) dry bread crumbs
  • 6 large slices firm white stale bread, preferably home-made style
  • 1/4 cup (50 mL) butter
  • 3 cups (750 mL) sliced cored peeled Ontario McIntosh Apples
  • 2/3 cup (150 mL) granulated sugar
  • 2 eggs
  • 2 cups (500 mL) hot milk
  • 1 tsp (5 mL) vanilla
  • 1/2 tsp (2 mL)cinnamon
  • Pinch of salt
  • 2 tbsp (25 mL) red currant jelly, melted
Preparation:
Sprinkle crumbs in well-buttered 8-inch (2 L) square baking dish. Remove crusts from bread; spread bread with half of the butter and cut into quarters. Line dish with half of the bread, buttered side up.

 

In large skillet, melt remaining butter over medium-high heat; sauté apples for 5 minutes. Sprinkle with 3 tbsp (50 mL) of the sugar; sauté apples for 3 to 5 minutes longer or until apples start to turn golden. Do not let apples become mushy.

In bowl, beat eggs well; beat in remaining sugar. Gradually whisk in hot milk, vanilla, cinnamon and salt; pour half of the mixture over bread in dish. Evenly spread apple mixture over top. Cover with remaining bread and pour remaining egg mixture over top.

Place baking dish in larger shallow pan. Pour 1 inch (2.5 cm) boiling water into larger pan and bake, uncovered, in 325°F (160°C) oven for about 45 minutes or until custard is almost set. Remove baking dish to wire rack. Brush currant jelly over top of pudding. Serve hot or warm.

Apple Cider Rice Cooker Oatmeal 6-8 Months
(steel cut oats used for this recipe)

Ingredients
2 1/2 cups of apple cider
2/3 cup of water
1 1/4 cups of rolled oats (don’t use quick cook oatmeal or the recipe won’t turn out well – trust me!)
shake of cinnamon
shake of nutmeg
pinch of powdered vanilla
handful of raisins or dates or chopped apples (optional – if using the raisins and/or dates, remove them if serving to baby!)

Directions:
I used steel cut oats for this and the texture was more chewy than you may want for your younger baby!
Lightly butter the rice cooker pot then combine all ingredients in the rice cooker and stir well
Close the cover and push the switch to cook
After 10 minutes, carefully open the rice cooker and give the oatmeal a quick stir, close and continue cooking.

Oatmeal is done when the cooking switch flips to off/keep/warm or whatever it does on your rice cooker (I have an Aroma 8 cup cooker, nothing fancy and only $24.95).  Allow to stand for 5-10 minutes after cooking.

Each month Baby Yums showcases a spotlight vegetable & fruit. This month our spotlight vegetable is Beets.

About this purple root vegetable Photobucket

Beets provide antioxidants, anti-inflammatory, and detoxification support. Beets contain calcium, potassium and even vitamin A. Both Vitamin A and Calcium play a large role in the healthy development of your baby.Choose small or medium-sized beets whose roots are firm, smooth-skinned and deep in color. Smaller, younger beets may be so tender that peeling won’t be needed after they are cooked.

Age for Introducing Beets: 8-10 months

here are a few great recipies to try out with your child(ren)

Purple Potatoes

1 cup of cooked mashed beets
2 cups of m

Mix beets and potatoes together and serve.
Add a 1/2 cup soft cooked diced carrots for extra eye appeal.

Roasted Beet   Shapes

5 medium sized   beets
cookie cutters
olive oil

Thoroughly cleanse and then peel the beets. Cut the beets into   thin slices. Using small cookie cutters, cut out shapes from the beet slices.   You may have to press really hard to do this. Transfer shapes onto a oiled   baking sheet and brush the beets lightly with olive oil.
Bake at 350 for   approx. 10-20 minutes or until the beets are soft and tender. You may wish to cover the baking sheet with a strip of tinfoil.

Serve as fun finger foods or simply mash and serve.

Ok so I won’t blog my little heart out about the Kitchen let alone the sink but I did find a few cute kitchen gadgets that thought would be fun to get a few comments. Since I’ve started cooking a lot of Baby Yums fresh homemade baby food I’ve find myself wanting new little gadgets to help me out along the way or make things fun!

My new favorite website to find really neat interesting things would be stumbledupon.com I had a little sneak peak at was was out there so I’ll post a few of my favorites that I’d like to share with you.

Ok you got to admit it’s a weird kitchen gadget but could be a great topic for discussion when entertaining with guest. I’ve been curious to know if that man in the middle comes out. It’s a pretty weird gadget as I’ve yet to see it in someones kitchen. Have you seen this? If so what are your thoughts would you have this on your kitchen counter? I would if I was single as I’m sure it would scare all the men away hhhaa. It is a funny looking knife holder but funny at the same time.  I’m going to leave it at that. When I stumbled upon it I could not help myself but think, weird, funny yet neat!

I really like this one because where huge BBQ lovers and when I say we’re I mean Hubby & Myself. For the longest time I did not eat meat once I was introduced to a great BBQ steak I fell in love. I think this funky little gadget is great to add personal touch to your meat on the grill great for when you have company over and you can “brand” the steak and know who’s steak is who’s. I know it’s not a “need” but it is a pretty funky gadget! I don’t personally own one but I will be on the hunt and try to find one for a funky little Father’s Day gift. I will let you all know if I find one in the Ottawa area.

  • My third love is not so much a gadget but is used in my kitchen. It’s my silicone muffin molds

It’s my must have gotta have from my own personal experience. I love all the things I use it for. I use it obviously to make muffins for the boys. I also use it when I’m freezing my toddlers food. I also use it when making Baby Yums toddler sized portions. It’s really easy to pop out once the food is frozen. Easy to clean compared to a muffin tin pan. Who uses them anymore anyway? I must admit I was still using the muffin tins till recently I convinced myself that the silicon muffin mold was the way to go. Since then I’ve never looked back.

Just wanted to start off and say a great big THANK-YOU to Spoiled Sugar for putting together an awesome AUCTION last week and all the venders who donated their product. Was a great success! All the money that was raised will go to Weekend to End Cancer.

Good Friday, Earth Day! This day was a great day doing a whole lot of things from getting orders delivered. Getting ready for Easter Weekend. Working on the boys Easter baskets. So what are you putting in the Easter Baskets that are a healthy choice?  Here is a list of things that we have put in the boys basket . Yes Chocolate is in their basket but that’s not what it’s all about.

Need a easy stuffing recipe for your Easter Turkey? Baby Yums would like to share thing simple yet tasty recipe. *Recipe found on Cooking Nook”

Best Turkey Stuffing

3/4 cup butter
2 1/2 cups chopped onions
2 cups chopped celery
4 teaspoons dried sage
1 teaspoon salt
1 teaspoon dried savory
1 teaspoon pepper
1 teaspoon marjoram
1/2 teaspoon dried thyme
14 cups dried white bread, cubed

In a large frying pan, melt butter over a medium heat. Fry onions and celery together with the dried herbs, salt and pepper, stirring often, until vegetables are tender, about 10-15 minutes.

Transfer the mixture to a very large bowl. Add the bread cubes and mix well.

If you are making the stuffing ahead: Transfer the cooked vegetable mixture to a large bowl. Let cool and refrigerate in an airtight container for 24 hours. Mix with bread cubes before stuffing the bird.

Stuff the turkey at both ends with this mixture. (see our Roast Turkey Recipe for directions on stuffing the bird).

IMPORTANT: Stuff the turkey just before baking it. Do NOT stuff the bird ahead and let it sit, even in the refrigerator. It can become infected with bacteria and make you quite ill.

So after thinking about a great Kitchen Gadget to feature in today’s blog. We did some polls on what kitchen gadget you can’t live without and why. Baby Yums Q&A:

Q:       I have a toddler food question. My son is almost 3 and honestly the worst for being a picky eater. He eats pizza, peanut butter toast, crackers, granola bars, raisin toast and cake! That’s pretty much it. I really need to get fruits and veggies in and more meat. How can I do this? I have tried dips etc but doesn’t work. Can you suggest some recipes If it is possible to hide in the food he likes?

A:      Tracy, we have a 2.5 year old son also and had the same issues. What we found helpful from our own experience that helped us. Our son will not touch a vegetable for his life. So what we do is make spaghetti sauce however we puree all the vegetables so that none can be seen. We even cook up the group beef and puree the beef so that it has a smooth yet very tasty consistency and low and behold it’s gobbled up before we know it. Recipe to follow below. You could also try doing that with other meat combos like Chicken, corn, carrots pure and maybe put it on top a bed of rice? It’s a trying game to see what he will and won’t like but it’s worth a shot. Also for fruits my biggest win over was again using the blender making “Fruit Smoothies” for my oldest son who now can’t get enough fruits. Smoothies are a great way to introduce fruits to toddlers who are picky. You could add milk and or yogurt and make it fun. Let him help you put the fruit into the blender. This way he feels proud in making something. We have noticed more appreciation and our son will eat or drink it. Recipe for a few different smoothies will be posted below to give you options. We hope this answers your questions please let us know how it goes and theses tips/tricks are personal experiences and may or may not work hopefully they work out for you and your son. Baby Yums ~ Crystal

 

Here is a  recipe as promised and a link for some other great choices recipe from website listed below

 

Smoothies: We have variations of recipes that we get off the internet. However feel free to switch up what you think your son will enjoy most.

 

Ingredients:

1 cup (250 mL) vanilla, plain, strawberry or raspberry fat-free yogurt
1/2 cup (125 mL) Banana Nut Cheerios* or another round oat cereal
2 tbsp (25 mL) ground flaxseed or flaxseed meal
1/2 cup (125 mL) fresh strawberry halves or raspberries, or frozen whole strawberries
1/2 cup (125 mL) skim milk
1/2 banana

Method:

Place all ingredients in blender. Cover and blend on high speed 10 seconds; stop blender to scrape sides. Cover and blend about 20 seconds longer or until smooth.

Pour mixture into glasses. Serve immediately.

Spaghetti Sauce recipe: Again this is a great way to hide veggies we will also provide the link on where to get great information on tricks. Recipe provide by Chef Michael Smith http://www.foodnetwork.ca/recipes/Beef/recipe.html?dishid=5756

 

Yield: 4

Ingredients

3 tablespoons of olive oil

3 onions, cut into large chunks

2 carrots, cut into large chunks

3 garlic cloves

2 cups of button mushrooms

3 stalks of celery, cut into large chunks

2 tablespoons of olive oil

6 ounces of pancetta or bacon, sliced thinly

8 ounces of ground beef

8 ounces of ground pork

8 ounces of ground veal

1 can of tomato paste

2 cups of red wine

2 bay leafs

1 large can of stewed tomatoes

salt and pepper

Directions

Pulse onions, carrots, garlic cloves, mushrooms, celery and olive oil in a

processor until finely chopped to your liking pureed This may need to be done

several batches.

 

Heat a large sauté pan with the olive oil and add pancetta. Fry until golden

aromatizing the oil with the rich flavour of the Italian bacon. Add the

mixture and sauté until it begins to caramelize. Add ground meats and stir

to break apart. Stir in the tomato paste, beef broth, bay leaf and stewed tomatoes

continue to stir and break up any chunks of meat. Simmer for about 30 minutes,

the sauce has thickened and all the flavours have blended. Taste and enjoy

Baby Yums food/photos & special recipe for toddlers

Baby Yums is back with another great blog. Filled with a list of great snacks and fast easy and tasty lunch recipe for your toddler(s).

The above photo is my oldest son Liam’s favourite. We have a few cubes of cheddar cheese & oh so yummy sweet cherry tomatoes. The sandwiches is grilled cheese with avocado. Recipe will follow at the bottom of the blog.

Snack time! Having 2 boys 1 & 2 years of age we find ourselves always running low on veggies & fruits.. Both boys LOVE their fruits is our personal list of the boys favourite snacks. We hope this is helpful to you and your little one when it’s time to do a switch up on things and not the same old.

Yogurt with granola  & cut up apples to use as dippers

Raisins with carrot sticks are a great combo

Apple sauce bought or homemade is a great snack you can add raisins to this dish

Tortilla to it with raspberry jam then roll up a whole banana and cut into wheels

Cheese quesadillas cut into small triangles

Blueberries, mango & peach, strawberry fruit salad

Mini pancakes pre made frozen then pop in the toaster for a yummy quick snack

 As promised here is a great fun quick recipe to make for your toddlers and they can help prepare with you, by putting the cheese or get fun and creative with putting the avocado on the sandwiches. I found this recipe on a website however added my own special touch to it.

Yummy Grill Cheese Sandwiches

 

What you will need:

4 Slices of bread (any choice you’d like) for the younger ones I just use normal bread. But for Mommy & Daddy you can try using Sourdough bread
       

½ Cup of cheddar cheese 

 

1 Whole avocado chopped and mashed (chunky)

 

2 Slices Guyer or Provolone or Swiss cheese

 

Non salted butter to put on both side of bread while grilling

1.         Butter both side of bread

2.         Place cheddar cheese on one slice of bread use enough so you will have leftover    for the 2nd sandwiches

3.         Then add half of the mashed avocado with 1 slice of the cheese of your choice

4.         Preheat a Panini or pan over med heat. Cook for about 4 min till golden

5.         ENJOY!

Goes great with a toss salad, cheese & cherry tomatoes anything your toddlers enjoy. Let them help spread the cheese on the bread, spoon the avocado just have fun with your little one that’s what it’s all about making good food fun!

We will also blog about kitchen tips and gadgets that are  kid & family friendly.
